How to cook "Kuban salad with eggplant for the winter"

Prepare your ingredients. Peel and wash the vegetables, rinse and sterilize the preparation jar well.

Rinse the carrots and onions, cut the onions into cubes, grate the carrots on a coarse grater.

Rinse the eggplants and cut into large cubes.

Cut the bell peppers into strips.

Place all prepared ingredients in a saucepan.

Combine tomato paste with water, mix well and pour into a saucepan.

Add salt and sugar here. Cook vegetables in tomato for 40 minutes over low heat.

At the end of cooking, add vinegar, stir and remove from heat.

Arrange the salad in sterile jars, roll up immediately and cool under a blanket for 24 hours.
