To prepare the soup, you can take any smoked meats on the bone that you like. The thickness of the dish can also be adjusted to your liking.

- Smoked pork ribs - 250-300 grams (or a small smoked shank)
- Beans - 100-120 grams (red, dry)
- Onion - 1 Piece
- Carrots - 1 Piece
- Garlic - 2 Cloves
- Bulgarian pepper - 1/4 Piece
- Paprika - 1.5 Teaspoons
- Vegetable oil - 50 Milliliters
- Wheat flour - 1.5 tbsp. spoons
- Grape Vinegar - 1 Teaspoon (or apple cider)
- Sour cream - 2 tbsp. spoons
- Salt - To taste
- Parsley - To taste (greens)
How to make "Hungarian Bean Soup"
Prepare the required ingredients.
Rinse the beans, pour 2 tbsp. water and leave overnight.
Rinse the beans in the morning, transfer to a saucepan. Add ribs, garlic, carrots. Fill with 1.5 liters of water. Put on moderate heat. Cook until the beans are done.
When the beans are ready, take out the ribs, carrots. Remove the garlic.
Remove the meat from the ribs. Cut the carrots into small cubes and send them to the pot with beans.
Heat vegetable oil in a skillet. Cut the onion into small cubes and fry until soft. Then add flour, paprika. Stir so that there are no lumps. Saute over low heat for 3 minutes.
Cut the bell pepper into thin strips or small cubes. Add to the skillet, fry, stirring for 3-4 minutes.
Pour a glass of broth or water into the pan. Boil for 5-7 minutes over medium heat.
Pour the dressing into a saucepan. If the amount of water has drastically decreased during boiling, add warm liquid to the pot. I needed to top up 1.5 cups of water. Put on fire and simmer 15 minutes after simmering over a slightly below medium heat.
Then add sour cream, salt. Stir.
Add chopped parsley, vinegar. Salt. Warm up for 3-4 minutes. Close the lid and let it brew for 20 minutes.
Serve the soup hot. Enjoy your meal!
