How to make Tomorrow's Coconut Cookies

We prepare the ingredients. Eggs (egg whites) must be cold.

First of all, beat three egg whites with a pinch of salt.

Gradually add granulated sugar or powdered sugar to the whipped egg whites and continue to beat. The granulated sugar will take longer to beat. At the same stage, you can add any additives to your taste: a spoonful of condensed milk or honey, vanilla. I usually do not add anything, since my husband is a connoisseur of harsh cookies to coffee without any fragrances.

Pour coconut flakes into whipped whites with sugar and gently mix with a spatula from bottom to top.

Now add the sifted flour and, in the same way, gently knead the dough from bottom to top.

The resulting dough should be fairly firm and viscous. We cover it with cling film and send it to the refrigerator for 15 minutes.

We line the baking sheet with parchment or baking film, I prefer the film and I'll show you why below. With hands dipped in water, we form cookies and put them on a baking sheet with a small margin of distance, since they will rise during the baking process.

We bake cookies in an oven preheated to 150 degrees for about 30 minutes, but remember that the baking time depends on the size of your blanks, I have them about the same diameter as Soviet oatmeal cookies. If yours are smaller, bake for about 20 minutes. But even if you dry it out, it's okay, the cookies will remain delicious.

Now let's get back to the issue of film and paper. Cookies (and not only these) in the baking process are very often baked from below to the substrate and it can be difficult to separate them without loss, especially in the case of paper, which tears easily and tends to stay with the cookie forever. The film (I just have a cut off part of the baking sleeve) is much easier to separate without tearing or crumbling the cookies.
