- Wheat flour - 500 grams
- Butter - 75 grams (in dough)
- Eggs - 5 Pieces (1 pc. - in the dough, 2 yolks + 1 egg - in the cream, 1 yolk - for greasing before baking)
- Vanilla sugar bag - 1 Piece (in cream)
- Corn starch - 20 grams (in cream)
- Lemon - 1 Piece
- Coconut flakes - 20 Grams
- Powdered sugar - 90 Grams

How to make Nest Buns

Prepare your ingredients.

Mix dry ingredients: flour, yeast, 50 grams of sugar.

Add 1 egg, 250 ml to the dry ingredients. milk, melted butter.

Knead the dough.

Dip the dough in ice water, you can use ice cubes for these purposes, the dough should lie down until it floats.

Remove the dough from the water, remove excess moisture by blotting with a napkin.

Sprinkle the work surface of the table with flour, knead the dough, put in a warm place for 1 hour.

While the dough is proving, start making the custard. To do this, mix 250 ml in a saucepan. milk, 2 egg yolks and one whole egg, cornstarch, vanillin and lemon zest. Mix well.

Boil the cream until thick, stirring in a "water bath".

Cover the finished cream "end-to-end" with cling film.

Mix one yolk with a tablespoon of milk - this is a mixture for greasing buns before baking.

Divide the dough into 12 pieces, about 80 grams each. Roll each piece into a ball, then make indentations in them, you can use a glass. I used a wooden pusher.

Fill the grooves in the buns with cream, brush with the yolk-milk mixture.

Bake the buns in the oven at 180 degrees for 25 minutes.

Prepare lemon frosting by mixing 40 ml. lemon juice and 90 grams of powdered sugar.

Slightly cooled buns, brush with lemon icing, sprinkle with coconut. You can place berries or fruit pieces on top.
