How to cook "Tomatoes with pearl barley for the winter"

Prepare your ingredients.

Rinse and dry the tomatoes, cut into small cubes.

Peel and wash carrots, onions and peppers. Grate the carrots with fine shavings, dice the onions and peppers. Roast vegetables for 10 minutes.

Add the tomatoes, stir everything and simmer for 15 minutes.

Boil pearl barley separately until tender.

Add barley to vegetables, add salt, sugar, a little pepper if desired, simmer for 25 minutes.

At the end of cooking, add vinegar to the pan, stir everything and turn off the heat.

Lay out the workpiece in sterile jars, roll it up immediately.
