Everyone in our family loves "Rassolnik" with rice. Barley, although considered a classic ingredient in this soup, is not a grain for everybody. And you need to cook it three times longer than rice. Such pickle without potatoes turns out to be very tender and tasty. The broth can be cooked from turkey, pork, beef.

Ingredients:
- Chicken - 300 Grams
- Rice - 3-4 Art. spoons
- Carrots - 1 Piece
- Onion - 1 Piece
- Pickled cucumber - 1 Piece
- Tomato paste - 1 tbsp. the spoon
- Sunflower oil - 20 Milliliters
- Salt - To taste

How to cook "Pickle without potatoes"

Prepare the ingredients for making the pickle.

Put the chicken in a saucepan, pour water.

Bring to a boil, reduce heat, remove foam. Boil the broth until the chicken is tender.

Peel, wash, and finely chop the onions.

Peel the carrots, wash and finely chop or grate. Add to onions.

Pour sunflower oil into a skillet and simmer vegetables over low heat for 7-8 minutes.

Place the onions and carrots in a saucepan with chicken stock. Boil the soup for 5 minutes. Then add the washed rice.

When the rice is done, add the chopped pickled cucumber to the saucepan.

Salt the pickle to taste, you can pepper. Top with tomato paste.

Cook the soup for another 5 minutes and turn it off.

Pickle without potatoes is ready. Serve with a slice of boiled chicken and sour cream.
