It is easier to buy tortilla in a store and then the cooking process is twice as simple and quick. But I decided to cook the cake myself and did not regret it. Of course, it is very difficult to bake a real corn tortilla at home. But from wheat it is quite easy. As for the filling, Mexican cuisine presupposes the presence of many hot and spicy condiments in it. My recipe is close to European cuisine, although the choice is yours.

How to make Mexican Chicken Tortilla
Prepare the ingredients for a Mexican Chicken Tortilla.
Prepare the filling. Peel, wash and finely chop the onions. Place in a skillet.
Pour in sunflower oil and fry the onion until transparent.
Wash the chicken fillet and cut into strips. Add to onions. Simmer the chicken and onions, stirring for 5 minutes.
Add the chopped skinless tomato and bell pepper.
Lay out the sliced mushrooms. Season the filling with salt and pepper.
Simmer chicken with vegetables and mushrooms until the liquid evaporates. The filling is ready.
Make a tortilla. Pour flour into a bowl, add salt and baking powder.
Add soft butter. Stir in flour until crumbled.
Pour in water.
Knead a soft, elastic dough. Cover the bowl with a towel and let the dough rest for 30 minutes.
Divide the dough into three pieces and roll each into a thin circle with a diameter of 20 centimeters.
Place the dough in a hot, dry skillet and bake for 1.5-2 minutes on each side.
Place the prepared filling on one side of the flatbread.
Add shredded cheese.
Fold the cake in half and cut in half. It's much more convenient to eat this way. Serve as a snack or snack any time of the day.
