How to make Peking Pancakes

Prepare the indicated ingredients.

Beat the chicken eggs into a deep container, add water and salt. Whisk everything until fluffy, about 2-3 minutes.

Stir in the sifted wheat flour and knead the light pancake dough.

Pour odorless vegetable oil into the dough. Rinse and chop the green onion stalks, add to the dough and leave it alone for 15 minutes to activate the gluten and impregnate with the aroma of herbs.

Then heat the skillet and pour a ladle of dough over it, immediately rounding it. Try to bake very thin pancakes, practically napoli, one minute on each side.

Place ready-made Peking pancakes in a pile on a plate or fill them and serve warm.
