Such a product can even be frozen as a semi-finished product to create cheese sauces. The main thing is to evaporate the liquid for a long time so that the cheese does not turn out to be melted.

- Cottage cheese - 400 grams (farmer's, any fat content)
- Chicken Egg - 2 Pieces
- Salt - 0.5 Teaspoons
- Soda - 0.5 Teaspoons (but not more)

How to make "Homemade cheese without milk"

Prepare the indicated ingredients. Use farm cottage cheese, as the store product will decompose into whey and grainy mass during cooking.

Melt the butter in a water bath, placing the bowl with the product on a container of boiling water. Make sure that there is a lot of water, the cheese will need to be boiled for at least 1 hour.

Add cottage cheese of any fat content to the container. It is advisable to use a dryish product so that it has less liquid for evaporation.

Beat the chicken eggs into a deep container, beat them for 2-3 minutes. You can use more eggs, the cheese will be denser, but with a rich egg flavor.

Pour the beaten eggs into the curd mass, salt, add baking soda and stir. Place in a water bath.

After 10-15 minutes, the cottage cheese will completely melt, do not forget to stir the whole mass, as it is covered with a film. Simmer the curd mass in a water bath for about 1-1.5 hours, stirring from time to time. The mass should be boiled down three times.

You will see that the mass has become denser and decreased in volume. Turn off heating. At this point, you can add various ingredients: a mixture of dried Provencal herbs, seasoning, mushroom pâté, etc. Remember that if you do not cook the mass, you will get regular processed cheese.

Purée the curd mass with a hand blender until smooth.

Line a container or bowl with cling film, pour the cheese mass into it and cover with plastic wrap on top.

Place the container in the refrigerator and cool for 4-6 hours until thickened. The cheese will be cut into chunks, not slices, as agar, gelatin and other thickeners are not present in it.

Cut or break homemade cheese into several pieces, serve on slices of bread with fresh vegetables, tea.
