To make the cookies airy, it is important not to hammer the dough with flour. Therefore, as soon as the dough has gathered in a lump, rub your hands liberally with flour and round. When shaping cookies, it is also best to use extra flour to burn the work surface.

- Coconut flakes - 40 Grams
- Wheat flour - 80 grams (+ 3 tablespoons for dusting the working surface)
- Egg - 1 Piece

- Cottage cheese - 200 grams (9% fat)
How to make "Coconut Curd Cookies"
Prepare the required ingredients.
In a bowl, mix cottage cheese, salt, sugar, egg.
Stir with a fork until smooth.
Add flour, baking powder, and coconut.
Knead a soft, slightly sticky dough to your hands. Do not hammer the dough heavily with flour. It is best to rub your hands and work surface generously. Put the resulting dough in the refrigerator for 10 minutes. Then divide into parts. In my case, it turned out 9 blanks, an average of 42 grams. Give the shape of the "washer".
Place the blanks immediately on a baking sheet lined with parchment paper. Turn the oven 180 degrees. Place the baking sheet in a hot oven for 20-25 minutes.
After the time has passed, remove the cooked biscuits from the oven. Leave it on a baking sheet for 15 minutes.
Remove the cookies from the parchment. Transfer to a serving dish.
