Charlotte is prepared very simply. You just need to beat the eggs well. Fresh quince is not very edible. It must be cooked before use. Therefore, it is very convenient to cook charlotte with quince jam. I do not recommend putting a lot of apples so that the baking does not turn out wet.

Prepare the ingredients for making charlotte.
Wash the apple, peel and chop. Place in a skillet, add two tablespoons of water and simmer until all the juice has evaporated.
Break eggs into a bowl.

Add sugar gradually and beat for 8-10 minutes. You should get a lush, white mass.
Add baking powder, gradually add sifted flour.
Stir the dough very gently with a spatula.
Line a baking dish with baking paper. Lay out the apple and quince slices.
Place the dough on top of the fruit. The diameter of my mold is 20 centimeters.
Preheat the oven to 170-175 degrees. Bake charlotte for 45-50 minutes. Check readiness with a wooden stick. When pricked in the middle of the pie, it should come out dry. To prevent charlotte from falling off after you take it out of the oven, proceed as follows. Turn the mold upside down and place it on three glasses or cups. Keep the cake in this position until it is completely cooled.
Cool the finished charlotte. Use a knife to go around the rim of the cake pan, cover with a large plate and turn the charlotte over.
