How to make Burnt Sugar Gingerbread
Prepare the indicated ingredients.
Pour the sugar into a cauldron or container with a non-stick bottom, pour in warm water and lemon juice, stir and place on the stove.
Bring the contents of the container to a boil and reduce the heat slightly. Simmer the sugar syrup for about 3-4 minutes.
At this time, melt butter or quality margarine in the microwave or in a water bath, but not until boiling. Pour 0.5 cups of granulated sugar, salt into a container with butter and add the yolks of chicken eggs.
Add cocoa powder and ground ginger immediately. If you wish, you can add other spices: cinnamon, coriander, etc.
Mix the melted fat thoroughly with the rest of the ingredients.
By this time, the sugar syrup will be caramel in color. Bring it to a dark brown color and turn off the heat. Cool the syrup slightly.
Pour the hot syrup into a bowl of melted butter and stir quickly. Add baking powder.
Add sifted premium wheat flour and knead to the dough.
It will turn out not as fat as shortbread dough, and not as fluffy as yeast dough. Cover the dough with cling film and leave to rest for 30 minutes.
Then line the baking sheet with parchment paper. Roll the gingerbread dough out on a work surface and cut it into cubes or cut out figurines. Place them on paper. Preheat the oven to 180 degrees and place the baking sheet in the oven. Bake the gingerbread cookies for about 15 minutes.
Put the finished gingerbread on a plate and let cool. You can check the readiness of the baking by breaking the gingerbread into two parts.
Pour one chicken egg white into the bowl of a food processor, add the powdered sugar and beat for 2-3 minutes.
After the specified time, you will receive the icing sugar.
Spread the cooled gingerbread cookies with the cooked glaze and let it dry or dry it in the oven at 60-70 degrees, opening the appliance door slightly.
