Ingredients:
- Eggplant - 500 Grams
- Bulgarian pepper - 1 Piece
- Tomatoes - 250 Grams
- Onions - 1/2 Pieces
- Garlic - 1-2 Cloves
- Greens - 1/4 Bunch (parsley, dill)
- Sunflower oil - 50 Milliliters
- Salt - To taste
- Ground black pepper - To taste

How to cook "Odessa style eggplant caviar"

Prepare all ingredients. Preheat oven to 250 degrees.

Wash the bell peppers and eggplant. Place them on a wire rack and bake in the oven for 40-50 minutes.

Cool the cooked vegetables completely.

Peel the peppers and eggplant, then cut into small cubes.

Finely chop the onions and parsley, pass the garlic through a press.

Make criss-cross cuts on the tomatoes, cover with hot water and leave for a couple of minutes. Peel, remove seeds and chop finely with a knife.

Add all vegetables to a bowl. Season with salt, pepper and oil. Stir and refrigerate the caviar for an hour to infuse.
