How to cook "Tomato cutlets"

Prepare all ingredients.

Make criss-cross cuts in the tomatoes, scald with boiling water and peel. Remove seeds and excess juice, then chop finely. Throw in a colander to drain excess liquid.

Finely chop the onion or grate it on a coarse grater. Crumble the feta, finely chop the mint. Chop sun-dried tomatoes as finely as possible.

Combine chopped tomatoes and all prepared ingredients. Season with salt and pepper.

Add flour, stir well. The consistency of the dough should resemble thick sour cream. Put the dough in the refrigerator for half an hour to thicken a little.

Preheat a skillet over medium heat, shape into patties with a tablespoon. Fry them for 2-3 minutes on each side, until golden brown. Put the finished cutlets on a paper towel to absorb excess oil.
