How to make Oat & Rye Cookies

Let's prepare the ingredients.

Pour sugar into a bowl, add an egg. Whisk.

Add apple juice.

Add soft butter to a bowl and mix everything.

Pour in oatmeal and stir.

Pour the rye flour into a bowl. Add slaked soda with lemon juice. We mix everything.

Add the zest of one lemon to the dough.

Put baking paper on a baking sheet. With a teaspoon, spread the portions of the dough in a checkerboard pattern. We send the baking sheet to the oven. We bake at a temperature of 200 degrees for 12-15 minutes.

As soon as the cookie acquires a light brown crust, it is ready. Turn off the oven and after a couple of minutes take out a baking sheet with cookies.
