Cooking description:
Pishmanie is a delicious dessert made with a minimum of ingredients. If you have experience in making and working with caramel, then this recipe will not cause any problems. Citric acid can be used instead of lemon juice.

How to cook "Pishmaniye"

Prepare all the ingredients you need to make the Turkish Dessert Pismanie.

Place the butter in a skillet, melt and bring to a boil over medium heat. Slowly add the sifted flour to the pan, stirring.

Reduce heat and sauté, stirring, until flour begins to crumble and no longer smells like raw flour. Remove and cool.

While the flour is cooling, make the caramel. To do this, pour water into a saucepan with a thick bottom, and add sugar. Place on medium heat.

Bring to a boil, pour in lemon juice. Simmer until a soft ball is reached. This is when syrup in cold water can be stretched like chewing gum.

Take an iron dish, preferably teflon-coated, and grease it with vegetable oil. Pour hot caramel over it. Stir with a spatula while the caramel is hot, then crease and stretch the caramel by folding.

Sift the flour through a sieve and place it on the table. Stretch the caramel into a ring and sprinkle with flour.

Stretch the caramel, dusting it with flour, and fold back into the ring. Repeat the stretching and flouring process until you have fine flour caramel strings. The caramel should completely absorb all the flour.

Then chop the strings of the writing into small pieces so that everything looks like cotton candy. Make lumps out of the resulting mass.

Place the lumps of writing on a plate, sprinkle with chopped pistachios and serve with hot tea. Enjoy your meal!
