Ingredients:
- Beets - 1 Piece
- Carrots - 1-2 Pieces
- Tofu - 100 Grams
- Spinach - 1/2 Bunch

- Balsamic vinegar - 1 tbsp the spoon
- Olive oil - 2-3 tbsp spoons

How to cook "Baked Beetroot with Tofu"

Prepare all ingredients. Preheat oven to 180 degrees.

Peel carrots and beets. Cut the beets into wedges and the carrots into cubes of about the same size.

Combine vegetables with olive oil and herbs in two different bowls. Add more balsamic vinegar to the beets.

Place the beets on a parchment-lined baking sheet. Bake for 15 minutes.

Add the carrots to the baking sheet and bake the vegetables for another 45 minutes. Open the oven periodically and stir the vegetables.

Place fresh herbs in a bowl.

Spread the baked vegetables on top.

Divide the tofu into small pieces with your hands. Pat them dry with a paper towel and add to a bowl. Season with salt and pepper to taste.
