Prepare the indicated ingredients. Use either fresh or smoked bacon.

You can cook poached eggs by creating a hole in boiling water and gently pouring the contents of the egg into it. You can make such a dish in a more convenient way and it will definitely work! To do this, cover the cups with cling film and grease the inside with vegetable oil. Roll a chicken egg onto the plastic wrap. If you don't grease it with oil, the protein will stick tightly to the film!

Then collect the edges of the film and tie, leaving a little air inside.

Dip in boiling water and boil for about 1-2 minutes. The yolk should remain liquid and the protein should become firm.

Fry the bacon slices in a skillet on both sides until golden brown.

Then remove them. Cut the buns in half, and put the cut bottom of the pastry in the pan, fry both bottoms of the buns in the fat that remains from the bacon.

Place the yolks of chicken eggs in a glass or porcelain container, and place it in a water bath. Pour in a pinch of salt, pour in vinegar.

Melt the butter in the microwave, but not until boiling. Beat the yolks until whitening with vinegar in a water bath, until the mixture begins to thicken. Pour in the butter in a thin stream, whisking the sauce.

Then add seasonings and spices, you can add your own - if desired. Remove the sauce from the water bath.

Place the fried bacon slices on the toasted bun halves.

Put a poached egg on top of the bacon, if desired - you can carefully cut it so that the yolk envelops the bacon on the bun.

Pour the prepared sauce over the dish. If desired, you can sprinkle with chopped herbs: green onions, dill, parsley, etc.
