How to make "Coffee Marshmallow"

Prepare your ingredients.

Pour agar-agar with water at room temperature, leave to swell.

Peel the apples from the core, place in a sealed container and send to bake in the microwave for 5 minutes.

While the apples are baking, make coffee, do not throw away the coffee cake, it will be used later in the recipe.

Remove the baked apple pulp.

Punch the pulp of apples with a blender in mashed potatoes, if desired, you can still grind through a sieve.

Add coffee pomace to the applesauce, if you want a less intense flavor, you can reduce the amount of coffee.

Beat the egg white first into a light foam, then, gradually adding sugar, beat until firm peaks.

Add applesauce and coffee to the beaten egg white with sugar.

Whisk until smooth.

Pour coffee into a saucepan, add sugar.

Add the swollen gelatin to the saucepan, stir well. Heat with constant stirring.

Bring the syrup to a boil and simmer for about 5 minutes, it may take less time, the syrup should thicken and begin to stretch.

Pour the syrup into the protein mass in a thin stream, whisking at the same time. Beat until the marshmallow mass begins to thicken and the mixer leaves embossed marks on its surface.

Transfer the marshmallow mass to a pastry bag and place the marshmallow on a prepared sheet, which it is advisable to cover with parchment. Dry the marshmallows at room temperature for about 12 hours.

Combine marshmallows in pairs and roll in powdered sugar. If desired, sprinkle lightly with cinnamon or cocoa.

Serve coffee marshmallows with coffee, they will perfectly complement each other!
