How to cook "Meringue with prunes"

Prepare your ingredients.

Rinse the prunes thoroughly and pat dry with a paper towel.

Chop the prunes as small as possible.

Separate the whites of two eggs, add a pinch of salt, beat until soft.

Gradually add all the sugar, whisking the whites continuously at high speeds.

Whisk the whites until firm peaks.

Add chopped prunes to the whipped egg whites.

Stir the prunes into the beaten egg whites with a silicone spatula or mixer at low speed.

Transfer the whipped mixture to a pastry bag and place on a baking sheet lined with parchment.

Bake the meringue on minimum heat at 65 degrees for about 1 hour 15 minutes. If it is difficult to maintain a low temperature, you can simply open the oven door slightly. The finished meringue should be easy to remove from the leaf and have a light creamy shade.

This dessert is perfect for tea, coffee or for decorating pastries (cakes, pastries, trifles). In addition, it can be stored well for a long time at room temperature.
