How to make "Beetroot Tofu Salad"

Prepare all ingredients.

Boil the beets in boiling water until soft.

Wash the parsley, dry it and separate the stems from the leaves. Chop the parsley coarsely and transfer to a bowl.

Peel the avocado, remove the pit. Cut the beets and avocado into medium-sized slices.

Cut the tofu into cubes.

Season the salad with olive oil and lemon juice. Season with salt, pepper and stir.
