- Milk - 170 Milliliters (warm)
- Fresh yeast - 15 grams (or 7 grams dry)
- Butter - 125 grams (25 grams - in the dough, 80 grams - for the streusel, 20 grams - for stewing the apple filling)
- Vegetable oil - 20 grams
- Salt - 1/3 Teaspoon
- Sugar - 175 Teaspoons (45 grams - for dough, 170 grams - for streusel)
- Chicken egg - 1 Piece (3/4 eggs - in the dough, 1/4 eggs - for greasing before baking)
- Apples - 3 Pieces
- Cinnamon - 0.5 Teaspoons
How to make Apple Horn Pie "
Prepare your ingredients.
Dissolve salt, sugar, yeast in warm milk.
Add melted butter to the milk mixture.
Shake the egg, pour 3/4 of the eggs into the milk mixture, leave 1/4 of the eggs to grease the cake before baking.
Add the sifted flour.
Knead the dough, while kneading, beat vegetable oil into it, knead for a long time, 7-10 minutes. Knead until the dough becomes smooth and elastic, which is called "clean hands", that is, the dough stops sticking to your hands. Place the dough in a bowl, which can be lightly brushed with vegetable oil. Cover with cling film, put in a warm place for 1.5-2 hours.
While the dough is coming up, do not waste time, get busy with the filling. Peel the apples, cut into small cubes, simmer in a pan with butter for 5-7 minutes.
Pour cinnamon over the apples, stir and cool completely to room temperature.
To prepare a "streusel" (topping with flour, sugar and butter), combine 80 grams of diced chilled butter, 130 grams of sugar and 100 grams of flour. Use your hands to grind the flour mixture into small crumbs, put in the refrigerator until use.
During fermentation, the dough will approximately double in size.
Divide the dough into 8 equal portions, weighing about 80 grams. Roll them into a ball. Cover with plastic wrap and leave alone for 5-7 minutes.
Roll out the dough into a thin flat cake the size of a baking dish, and sprinkle one half with a streusel.
Cover with the other half of the tortilla, and sprinkle the streusel on top.
Arrange the apple filling in triangles on both sides.
Fold the cake towards the center, in the form of two "horns".
Place the dough pieces in a mold with a diameter of 25-27 cm, greased with butter and lightly floured. Let it proof for 40-50 minutes.
Grease the cake with leftover egg before baking.
Bake the pie in the oven at 180 degrees for 40-50 minutes. Check the readiness with a wooden skewer; when piercing the baked goods, it should remain dry.
