Particular attention should be paid to the preparation of the noodles. In order for it to separate well after cutting, the layer must be thoroughly rubbed with flour, as if rubbing it into the dough. There is no need to dry the noodles, because it is boiled immediately. If you take ready-made broth, keep in mind that it may already contain salt and pepper.

- Mushrooms - 350 Grams (champignons)
- Carrots - 1 Piece (small size)
- Onions - 1 Piece (medium size)
- Wheat flour - 200 grams
- Water - 5-6 Art. spoons
- Vegetable oil - 4.5 Art. spoons (4 tablespoons - for frying vegetables, 0.5 tablespoons - in the dough)
- Salt - To taste
- Ground black pepper - To taste
- Vegetable Broth - 500 Milliliters (or water)
- Dill - To taste (fresh)

How to make Lean Mushroom Noodles

Prepare the required ingredients.

Make noodle dough. Pour flour into a bowl. Add a couple tablespoons of water.

Begin to stir the mixture with a fork. Add water (3 tablespoons) as you mix. As soon as it becomes difficult to stir with a fork, add 0.5 tbsp. vegetable oil and knead the dough with your hands.

The resulting dough should be moderately tight. Cover and refrigerate for 30 minutes.

While the dough is "resting", fry the vegetables. In 4 tbsp. vegetable oil, fry chopped onions and carrots at random.

Shift the fried vegetables.

Cut the champignons into quarters. Transfer to a skillet without oil and heat until liquid appears. Then remove from heat.

Make noodles. Remove the dough from the refrigerator. Cut 1/4 part and roll into a very thin layer. Thin enough to show the work surface of the table.

Rub the dough gently with flour and roll it several times. Can be "roll" or "accordion".

Transfer the dough to a board. Use a very sharp knife to cut the dough into strips. Determine the thickness yourself. Whoever likes it more.

Pour vegetable stock or water into a saucepan. Put the fried onions with carrots, mushrooms into it. Bring to a boil.

Reduce heat and add noodles. Add salt and pepper to taste and cook after boiling for 10 minutes, stirring occasionally.

Add the chopped dill 3 minutes before cooking. Close the lid.

Serve the cooked lean noodles with mushrooms hot. Enjoy your meal!
