  • Rye flour - 600 grams (300 grams - for sourdough, 100 grams - for brewing, 200 grams - for dough)
  • Malt - 50 Grams (fermented)
  • Cumin - 10 Grams
  • Mashed potatoes - 100 grams
  • Wheat flour - 300 grams
  • Salt - 1 Teaspoon
  • Honey - 30 grams (or molasses)
  • A mixture of rye flour and rye bran - 2 tbsp. spoons (for forming bread)

Prepare your ingredients.

Combine rye sourdough, 300 grams of rye flour and 150 ml. water. The mass should be thick enough. Leave to ferment for 12 hours. For example, from 9 pm to 9 am.

Put the potatoes to boil. Mix 100 grams of rye flour, fermented malt, cumin. The brew can be done at the same time as the sourdough.

Pour the mixture with boiling water (200 grams), I brewed potato broth, mix.

Add 100 grams of mashed potatoes. Put the saccharification infusion in the oven at 65 degrees for 1.5-2 hours (I did this in the oven with the door slightly open).

After 12 hours of fermentation of the leaven, combine the leaven and the brew.

Mix the starter with the tea leaves, cover with cling film and leave to ferment for 4-5 hours.

For kneading the dough, take 100-150 ml. water (I took 125 ml, it all depends on the flour), dissolve salt and honey in water.

Pour water with honey and salt into the sourdough brew, add sifted flour (100 grams of rye and 300 grams of wheat).

Knead the dough, cover with cling film and let it ferment for 2 hours.

After 2 hours, the dough increased significantly.

Sprinkle the work surface of the table with a mixture of rye flour and rye bran, lay out the dough.

Form the bread, place on a baking sheet and rise for 1 hour. Bake bread for 20 minutes at 240 degrees with steam, 20 minutes at 240 degrees without steam and 20 minutes at 200 degrees.
