- Eggplant - 550 Grams
- Cherry Tomatoes - 250 Grams
- Salt - To taste
- Starch - 1/2 Cup
- Soy sauce - 2 Tbsp. spoons
- Olive oil - 1-2 tbsp. spoons
- Garlic - 1 Clove
- Pea sprouts - 1 Bunch
- Vegetable oil - 1/2 Cup (for frying)

How to make "Crispy Eggplant and Tomato Salad"

Prepare all ingredients.

Wash the eggplant, cut into small slices. Season with salt and leave for 15 minutes.

Then rinse the eggplants in cold water. Dip the slices in the starch on all sides.

Fry the eggplant slices in plenty of oil until crisp. Then place on a paper towel.

For dressing, combine olive oil, soy sauce and pressed garlic.

Cut the cherry tomatoes in half.

Place pea sprouts and cherry tomatoes on a plate.

Add eggplant. Drizzle with the dressing and serve.
