Prepare your ingredients.
Pour water into a container for kneading dough, dissolve salt, sugar, yeast.
Knead the dough, using a mixer hook attachment.
Cover the dough with plastic wrap. Three times, after half an hour, knead the dough using the "stretch and fold" method.
After 2 hours, the dough has increased in volume, you can start molding the bread.
Sprinkle flour on the work surface of the table, lay out the dough, stretch it into a rectangular layer, tuck the upper corners of the dough towards each other.
Roll the dough inward, as if rolling into a roll.
Fold the edges of the dough inward.
Roll the dough into a roll, secure the edge of the dough with a punch with the edge of your palm, roll it up, comparing the "seam".
Put the bread on a baking sheet, let it proof for 30-40 minutes. Then make an incision of any shape with a razor blade or sharp knife.
Bake the bread in a preheated oven for the first 10 minutes at a maximum temperature of 220 degrees, then lower the temperature to 180 degrees and bake for another 40-45 minutes. Put the finished bread on a wire rack to cool, as the baking process is still in progress.
