Ingredients:
- Eggplant - 2 Pieces
- Salt - To taste
- Vegetable oil - 3 Tbsp. spoons (2 tablespoons - for eggplant, 1 tablespoon - for dressing)
- Tomatoes - 2-3 Pieces
- Greens - 1/2 Bunch (dill, parsley)
- Garlic - 5 Cloves
- Hot Pepper - 1/4 Piece
- Apple cider vinegar - 1.5 - 2 Tbsp. spoons

How to cook "Spicy appetizer of eggplant with tomatoes"

Prepare all ingredients.

Cut the eggplant into slices. Large circles can be cut in half. Season with salt, leave for 15 minutes, so that the eggplants give liquid.

Squeeze the eggplant, add vegetable oil, brush each slice with it.

Fry the eggplant on both sides in a well-heated dry skillet.

Chop the tomatoes finely.

Add minced garlic, finely chopped hot peppers and salt. Pour in vinegar and vegetable oil, mix.

Add fried eggplants, finely chopped herbs, stir. Let the appetizer brew for half an hour and serve.
