Any dried mushroom will work well for cheese soup. It is better to take cream with a high fat content, it will turn out to be more creamy and tender. If you want a thicker soup, then increase the amount of cheese or use another method. Add a little flour to the cold cream before adding to the soup and stir until smooth. It will not give away flour, but it will turn out to be thicker and velvety.

- Dried mushrooms - 25 grams
- Water - 1 Liter
- Potatoes - 150 Grams
- Carrots - 70 Grams
- Onion - 60 Grams
- Cream - 100 Milliliters (20% fat)
- Processed cheese - 90 grams
- Salt - To taste
- Ground black pepper - To taste
- Vegetable oil - 1 tbsp. the spoon
- Dill - To taste

How to make "Cheese Soup with Dried Mushrooms"

Prepare all the ingredients needed to make the dried mushroom cheese soup.

Place the dried mushrooms in a deep bowl and cover with 1 liter of water. Leave in a cool place for 8 hours.

Peel the carrots, rinse and grate on a fine grater. Pour vegetable oil into a skillet and heat over medium heat. Add carrots to the skillet.

Peel and finely chop the onions. Add to the skillet with carrots. Stir the vegetables for 5 minutes.

Strain the water in which the mushrooms have been soaked into a saucepan. Place the saucepan over medium heat and bring to a boil.

Cut the soaked mushrooms into strips and add to the pan with vegetables. Fry vegetables with mushrooms over medium heat for 7 minutes.

Peel the potatoes, rinse and cut into strips. Place in a saucepan with mushroom broth and cook for 10 minutes.

Add the sautéed vegetables with mushrooms to the saucepan. Cook for 5 minutes.

Pour the cream into a saucepan and stir.

Grate the processed cheese on a coarse grater.

Add the grated cheese to the soup pot. Stir and cook for 5 minutes over low heat after boiling. The cheese should melt completely. Remove from heat and let stand for 10 minutes to steep.
