How to make Italian Lemon Cookies
Prepare your ingredients.
Remove the zest from two lemons.
Squeeze the juice of one lemon.
Beat eggs into a bowl for kneading dough, add sugar.
Whisk until creamy.

Combine flour with baking powder, stir.
Pour in the flour mixture, knead the dough, it is best to do this with a mixer, a hook attachment.
The dough is very soft and tender.
Transfer the dough to a bag, put it in the refrigerator, or in the freezer for 30-40 minutes.
Pinch off a piece the size of a walnut from the dough, roll into a ball and roll in powdered sugar.
Place the cookies on a baking sheet, spread well apart from each other. Lay out 16 pieces on a sheet. A total of 32 pieces are obtained.
Bake in the oven at 180 degrees for 15 minutes.
