- Dough - 250 grams (puff, yeast)
- Milk - 185 Grams
- Flour - 1 Teaspoon
- Sugar - 75 Grams

How to make Custard Croissants
Prepare your ingredients.
Make the custard first. To do this, take a saucepan, add vanilla sugar to the milk, heat to a boil, but do not boil.
Mix egg, starch, flour, sugar.
Pour the heated milk into the egg mixture, stir.
Pour the milk and egg mixture back into the saucepan, heat until thickened.
Strain the cream through a sieve to remove any lumps, if any.
Cover the end-to-end cream with cling film, refrigerate.
Now move on to baking croissants. Roll out the dough into a rectangular layer, cut into triangles.
Make a small notch at the base of the triangle.
Fold up the corners of the dough and start rolling from the base of the triangle to its apex.
Curl the croissant slightly into a crescent shape.
Place croissants on a baking sheet, brush with milk.
Bake croissants for 15-20 minutes in an oven preheated to 200 degrees.
Chill the croissants lightly and use a sharp knife to make a horizontal cut in the side.
Transfer the custard to a pastry bag and fill the croissants with the cream.
If desired, you can add fresh berries to the cream. I added some frozen currants, it really revives the taste. Croissants turned out to be simply wonderful, tender and delicious.
