How to cook "Dacquoise"

Prepare your ingredients.

Place the hazelnuts on foil or baking paper, preheat the oven to 150 degrees and place the nuts in it for 10 minutes.

Pour the hot nuts onto a waffle towel, grab the edges of the towel into a knot, and rub the nuts together to separate the husks. If the nuts are cleaned by 70%, this is already the norm.

Fold the nuts in a blender and grind them into crumbs, try to prevent the nuts from clumping and not giving off oil, you need small crumbs, almost flour.

Add 100 grams of powdered sugar to the nuts and stir.

Sift the mixture of nuts and powdered sugar into a mixing bowl.

Separate the whites of 5 eggs, beat them with sugar until foamy.

Pour the nut mixture over the proteins.

Knead the nut dough gently, being careful to maintain the fluffy structure of the proteins.

Line a baking sheet with baking paper, draw the outlines of your pastries on it, I had four circles the size of a tea saucer. Transfer the dough to a pastry bag with a 12 mm nozzle and place the dough over the stencil using a snake. Bake for 35 minutes at 170 degrees.

While the dacquoise is baking, prepare a mixture of 80 grams of nuts, chopped into not too fine crumbs and 50 grams of powdered sugar.

Sprinkle the mixture of powdered sugar and nuts over the baked cakes. On this we can assume that the dacquoise is ready. Carefully remove the cakes from the sheet. If you do not plan to use them right away, you can wrap them in plastic wrap.

If you decide to make a dessert on the basis of "dacquoise", decorate it with whipped cream or any other cream, fruits and berries.

Lay the second cake on top and repeat the decor, sprinkle with a nut mixture on top. The result is an unusually tasty and delicate dessert.

This dessert is extraordinarily good with coffee!
