First of all, pour 250 ml of boiling water over the coffee and mix well. Of this amount, 50 ml will be needed for the biscuit, the remaining 200 ml will go to the soufflé.

Separately, beat the eggs and sugar into a biscuit in a deep bowl. Beat for about 7-10 minutes until a white foam appears.

Add 50 ml of brewed coffee and stir.

Add flour.

Stir the dough gently until smooth, moving from top to bottom.

Bake the crust at 180 degrees for about 30 minutes.

Allow the finished biscuit to cool right in the mold. Then combine the cream and sugar. Whisk, add 200 ml of coffee and stir. Soak gelatin in 200 ml of water before swelling, dissolve in a water bath and add to the cream. Mix everything well and pour the creamy mass onto the cooled crust. Refrigerate dessert for about 4 hours.

After the top layer has set well, carefully remove the dessert, trim the edges and cut into portions. The coffee cake is ready. I served with coffee, decorating the top with grated chocolate. Enjoy your meal!
