How to make "Quail Soup"
Prepare all the ingredients for the soup.
Quail carcasses are sold already peeled, like chicken. Take out the entrails, rinse them well and the quail.
We cook the first broth: put the quails in a saucepan, cover with cold water, bring to a boil and cook the meat for 15-20 minutes at a low boil.
We cook the second broth: drain the water, wash the quail carcass again, put in a clean saucepan, add giblets (except for the liver), pour 2 liters of cold water, bring to a boil and cook for 20 minutes at a low boil.
Peel and chop the carrots and onions.
Peel and slice potatoes.
After 20 minutes, add the onions, carrots, potatoes and rice to the broth. Add salt, pepper, bay leaf, and allspice to taste.
Bring the soup to a boil again and cook for 30 minutes, until the rice and potatoes are cooked through. 5 minutes before the soup is ready, add the liver. Add chopped herbs, stir and remove from heat.
This is how you can serve soup for children. Separate the meat from the bones, cut and return to the soup. Enjoy your meal!
