1. Wash the fish fillets, then wipe dry. In a bowl, combine wine, lemon juice, thyme, mustard, olive oil, and salt. Marinate the fish and leave for a day. Bake the marinated fillets in an oven preheated to 190 degrees for about 20 minutes, then cool the fish and remove the bones.
