Filet mignon is not a food for every day, I cook it for special occasions. Today I will tell you how to cook filet mignon with lemon oil. A piece of fine beef tenderloin, coarse salt, fresh ground pepper, some tarragon and lemon juice are all you need for a delicious steak that's pan-fried and then baked to perfection in the oven. Ideally served with baked potatoes or vegetables.

- Beef tenderloin steak - 4 Pieces
- Salt - 1/2 Teaspoon
- Ground black pepper - 1/2 Teaspoon
- Tarragon - 1 Pinch
- Lemon Juice - 50 Milliliters (Approximately the juice of one lemon)
- Butter - 1 Tbsp. the spoon
How to cook "Filet Mignon"
1 Remove the meat from the refrigerator, at least one hour before cooking, to bring it to room temperature. Season with salt and leave. 2 Next, tackle the lemon oil. Combine the butter, lemon juice and tarragon until smooth and set aside for 10 minutes, the butter should completely melt and absorb the aromas of the spices and lemon juice. 3 Fry the steaks in a skillet; for medium cooking, fry for about 3 minutes on each side. I use cooking tongs, they are very convenient for turning the meat. 4 Place the steaks in an oven preheated to 200 degrees for 4-5 minutes. Remove the meat and rest on a wooden board or warm plate for 5 minutes before serving. Top with lemon oil and sprinkle with ground black pepper before serving.
