How to make American Apple Pie

1 Let's prepare shortbread dough. In a bowl, combine the sifted flour, sugar, salt, and small cubes of cold butter. Rub with a cold fork until crumbly. Add ice water, stir the dough with a spoon, then quickly knead with your hands and form a ball out of the dough, wrap it with cling film and put in the refrigerator for 30 minutes. 2 Prepare the apple filling. Wash, dry, peel the apples, remove the core and cut into cubes. In a bowl, combine apples with lemon zest and juice, add cinnamon, salt, ginger, flour, starch and mix well. Add sugar, cooled melted butter, stir and leave apples for 10 minutes. 3 Divide the cold shortcrust pastry into 2 unequal portions. Roll out most of the dough, sprinkle with flour, into a round layer 3 mm thick. 4 Transfer the dough (on a rolling pin) to a baking dish lined with parchment paper. Remove excess dough around the edges, prick the dough with a fork. 5 Place the apple filling with spices on top of the dough. Use your hands to form a “dome” of the filling. There should be no voids and air in the filling. 6 Roll out the second part of the dough into a round layer 3 mm thick. Lay the dough tightly, pressing it against the filling, cut off the excess dough around the edges. Tightly join the edges of the lower dough layer and the upper one. Refrigerate apple pie for 15 minutes. 7 Form the rim of the pie with the "cloves", pinching the dough with your index and thumb. Repeat this operation one more time and refrigerate the cake for 1 hour. 8 Mix the egg yolk with 1 tsp. water, grease the top and edges of the cake, sprinkle with 2 tbsp. l. icing sugar. In the middle of the pie, on the dough, make 5 cuts. 9 Place the pie on the middle oven shelf and bake for 50-60 minutes at 175 degrees. At the end of cooking, place the cake on the lower level for 10 minutes. Then put it back on the middle setting and turn on the top grill for 5 minutes to caramelize the icing sugar. This is if the top of the pie remains light, but if the top of the pie is already cooked, cover the pie with food foil and bake for the set time, until cooked: the whole crust should be evenly golden. 10 Put the finished pie on a wire rack on the table and leave to cool for 4-5 hours.
