Initially, the pickle was transparent and not very thick, traditionally prepared on calf or beef kidneys. I don't really like kidneys, so I chose more affordable meat for myself - pork ribs or lean beef. I've seen different versions of this soup. Some people add tomatoes or tomato paste to the pickle, and I will tell you how to make a simple pickle recipe.

How to cook "Pickle (simple recipe)"

1 Pour water over the meat (you can pre-cut into cubes), add allspice and cook until soft. Do not add salt, because pickles are used in the soup, it is better to do this at the very end. 2 Peel the potatoes, cut into cubes and add to the meat along with the porridge. 3 Peel the onion, cut into cubes. Grate the carrots. 4 In a frying pan preheated with oil, fry the onions until transparent, then add the carrots and fry until golden brown. When the potatoes are almost done (about 10 minutes), add the fried carrots and onions. 5 Boil for 5 minutes and add the grated pickles. 6 Let the soup simmer for 10 minutes. Finally, add chopped fresh parsley and dill. Serve with sour cream. 7 Bon appetit!
