1 Let's prepare the dough. Combine dry yeast, warm water, sugar, salt and a little flour in a small container. Mix everything thoroughly and leave for 10 minutes for the yeast to start working. 2 Meanwhile, sift the flour, mix with sugar and salt, then pour in the yeast mixture and mix everything thoroughly with a wooden spoon. Pour in olive oil and knead the dough until it becomes elastic. 3 Roll the dough into a ball, sprinkle with flour and cover with a napkin. We leave the dough for 1 hour at room temperature, during this time it will increase and fit. 4 Let's deal with the filling. To do this, boil potatoes in their skins and peel them. Once the potatoes have cooled, they will need to be cut into small cubes. 5 Rinse the mushrooms under water and cut into thin slices. Peel the onion, garlic and chop finely. Pour a small amount of olive oil into a hot frying pan, fry the onions, garlic and mushrooms. Fry until all the liquid has evaporated. Mix potatoes and mushrooms, salt and pepper to taste. 6 Knead the dough and divide into balls. Roll each ball into a cake, in the center of which we put the filling and pinch the edges.
