Rinse the thighs and dry well. Heat the olive oil and fry the thighs on both sides until golden brown. Reduce the heat and warm the thighs over the lid for another 10 minutes, turning it over once.

Place chicken on a plate, keep warm. In the remaining oil, sauté, stirring occasionally, finely chopped onion and garlic. Pour the tomato trade wind or blended tomatoes in their own juice into the pan. Add tomato paste, chicken broth or boiling water and heat, stirring occasionally, until the volume is reduced by a third. While boiling, add a pinch of sugar, salt and pepper to taste.
