A deceptively simple dish that I like to serve with a light vegetable salad (tomatoes, cucumbers, cabbage). Usually I prepare the thighs at the rate of: 1 piece per person. You can cook this even all year round, because there are potatoes and chicken meat all the time. Add other vegetables, such as courgettes or eggplants, if desired.

How to cook "Chicken thighs with potatoes in the oven"
1 Wash the meat and rub it with salt and pepper. Peel potatoes, wash and cut into small pieces. 2 Place the meat in a baking dish, skin side down, and spread the potatoes around it. Pour olive oil over potatoes and sprinkle with salt and pepper. 3 Peel the garlic cloves and distribute them in a mold. Wash the lemon and cut it into slices, place on top of the potatoes. 4 Bake the meat and potatoes in an oven preheated to 200 degrees for about 30 minutes. 5 After half an hour, remove the mold and turn the meat over, bake for another 20-30 minutes. 6 Sprinkle the finished dish with finely chopped herbs. Enjoy your meal!
