How to make "Real Hungarian Goulash"

1 Peel the garlic and chop it very finely. Wash and cut the shallots into 4 pieces. 2 Heat a cauldron with olive oil and add the garlic first, and after a couple of minutes add the shallots. 3 Peel the potatoes and chop coarsely. Wash and peel the peppers, and cut into cubes like the leeks. 4 Wash the meat and cut into small pieces. Transfer the onion from the cauldron, then pour 1-2 tablespoons of olive oil and lay out the meat, pepper and salt, fry until a crust forms. Remove the meat and transfer to a bowl. 5 Put pepper, leeks, potatoes in a cauldron and fry for 3-5 minutes, pour in wine, beef broth and add celery seeds, rosemary, paprika. 6 After boiling, add previously fried vegetables and meat to the cauldron, then bring to a boil and remove from heat. 7 Salt and pepper, send the cauldron to an oven preheated to 220 degrees for 60 minutes. 8 Serve hot goulash and garnish with parsley.
