There are a lot of recipes for cooking squash caviar according to GOST on the Internet, and everyone claims to be the ultimate truth. Many contain celery root in their ingredients. I dare to assure you, as a witness to events more than twenty years ago, such an "exotic" vegetable was not known then, so no one added it to caviar. - Zucchini - 500 Grams
- Bulb onion - 100 Grams

- Sunflower oil - 50 Milliliters

- Salt - 1 Teaspoon
- Garlic - 2 Cloves
- Vinegar 9% - 1 tbsp. the spoon
How to cook "Zucchini caviar according to GOST"
In order to cook squash caviar in accordance with GOST, you will need the following ingredients: squash, carrots, onions, tomato paste, garlic, salt, sugar, sunflower oil and vinegar.
Wash the courgettes and cut into cubes. Place in a frying pan and add 2-3 tablespoons of sunflower oil.
Simmer the zucchini over medium heat, stirring, until tender. The liquid should boil off. Transfer to a bowl.
Peel and wash carrots and onions. Finely chop the onion and grate the carrots. Place in a skillet.
Pour 2-3 tablespoons of sunflower oil into a pan with carrots and onions and simmer until cooked over medium heat, stirring occasionally.
Add carrots and onions to the courgettes.
Beat the stewed zucchini, carrots and onions with a mixer.
Place the vegetable puree in the skillet. Add tomato paste, salt and sugar.
Add the garlic, stir and simmer the squash caviar for another 5-10 minutes in a skillet.
Zucchini caviar according to GOST is ready. If you want to cook it for the winter, then add vinegar 9%, stir and roll up in sterilized jars. Store in a cool place.
