  • Lemon Jelly - 85 Grams
  • Water - 1 Glass
  • Cracker - 150 Grams
  • Butter - 2 Tbsp. spoons
  • Curd - 700 Grams
  • Sugar - 0.5 cups
  • Blueberries - 1 Glass (fresh or frozen)
  • Lemon Juice - 1 Teaspoon
  • Starch - 1 Teaspoon

How to make "Curd cheesecake without baking"

1 Bring water to a boil, pour into a bowl of gelatin and stir until completely dissolved. Cool at room temperature. 2 Crumble the crackers and stir in the melted butter. 3 Place the baked mass in a baking dish, press with your hands and refrigerate. 4 Transfer the cottage cheese to a bowl, add granulated sugar (1/4 cup). Whisk at medium speed and pour in the jelly little by little. 5 Pour the resulting mass into a mold with a sand base, cover with cling film and refrigerate for several hours, or better overnight. 6 In a saucepan, combine the remaining sugar, starch and ¼ cup water and put on fire. 7 Place blueberries in a saucepan and cook mixture for 2-4 minutes, add lemon juice. 8 Cool the mixture and whisk everything in a blender. Remove the cheesecake from the refrigerator and pour over the cooked blueberry mixture, garnish with whole berries and refrigerate again. 9 Serve the well-chilled cheesecake on the table.
