- Mackerel - 2 Pieces
- Onion - 1 Piece
- Parsley - 1/2 Bunch
- Grain mustard - 3 Teaspoons
- Lemon Juice - 2 Teaspoons
- Yolk - 1 Piece
- Powdered Sugar - 1 Pinch
- Vegetable oil - 2 tbsp. spoons
- Black Pepper - To taste
How to make "Mackerel Rolls in Mustard Sauce"
Cut the mackerel into skinless fillets. Season with salt and pepper and drizzle with a spoonful of lemon juice.
Finely chop the onion (half) and parsley. Brush the fillet with 2 teaspoons of grain mustard and sprinkle with chopped onion and parsley.
Roll the fillets into rolls and secure with toothpicks. Place the rolls in a mold over the sliced onion rings from the second half of the onion.
For the sauce, mash the yolk with lemon juice, a pinch of salt and powdered sugar. Add a second spoonful of mustard, stir. Whisk with a broom, adding oil a little.
Pour the sauce over the rolls and bake in an oven preheated to 200 degrees until golden brown, 15 minutes. Let stand in the switched off oven for another 10 minutes.
Serve with fresh cucumbers under a glass of white wine.
