Punch the eggplant, pepper and garlic with a blender in pulse mode into the eggplant crumbs.

In a deep skillet with a thick bottom over medium heat, stir-fry the vegetable mixture until soft. Do not rush, you do not need to blush the vegetables, only warm them up. Technique like Italian sofritto, slow sautéing.

While the vegetables are being sautéed, use a blender to punch through ripe tomatoes (without the skin) with garlic and herbs.

Pour the tomato mixture over the vegetables and continue to simmer also slowly over a low-medium heat. Season with salt and sugar. When the volume has decreased by about half and the consistency is closer to a thick sauce, add the spices. Crush the pepper and cloves not too finely, add the mustard seeds whole. Pour in red wine vinegar and simmer for another 5 minutes.
