This is a very tasty, aromatic and satisfying dish! Pork can be replaced with chicken or beef, but in the case of beef, the dish will have to be cooked a little longer. First, the meat must be stewed until tender and only then added to the vegetables.

- Pork - 500 grams (lean)

- Eggplant - 1 Kilogram

How to make Pork Stew with Eggplant
Cut the pork into medium cubes and fry with the onion until golden brown.
Add the eggplant, cut into cubes the same size as the meat. Fry until light crust.
Add pepper and reduce heat. Fry for 3-4 minutes.
Arrange the coarsely diced tomatoes and shredded celery. Add coarsely chopped garlic, season with salt and pepper. Simmer the dish for 15-20 minutes over low heat, stirring occasionally so that the stew does not turn into porridge.
Serve immediately, sprinkled with herbs and accompanied by soft bread. Enjoy your meal!
