How to cook "Eggplant boats with sausages"
Wash the eggplant and cut it in half lengthwise.
From each half of the eggplant, remove some of the pulp with a teaspoon, leaving the sides.
Prepare the filling. Cut the eggplant pulp into cubes and place in the pan.
Add finely chopped onions. Pour in the sunflower oil and fry the eggplant and onion for 10 minutes, stirring occasionally.
Finely chop the tomato and send to the pan.
Season with salt to taste and simmer the vegetables for another 3-4 minutes.
Place a sausage in the eggplant halves, then place in a baking dish.
Spread the vegetable filling on top.
Pour some water into the mold and send the eggplants - boats to the oven, preheated to 190 degrees. Cook for 40-45 minutes.
Remove the eggplant from the oven and sprinkle with grated cheese.
Return the eggplants to the oven for 5 minutes to melt the cheese.
