Prepare all the ingredients you need.
Wash the egg thoroughly. Separate the white from the yolk. Whisk the protein with a pinch of salt until soft peaks.
Whisk the yolk with sugar and vanilla sugar until creamy.
Break the chocolate into pieces, stir with the cream and melt in the steam bath.
