How to make Protein Custard

Degrease the container where you will make the cream (for example, with alcohol). Prepare a water bath. Send proteins, sugar and vanilla to a fat-free container.

Now we begin to beat the mass, we do it for 5-7 minutes.

When the water boils, we put the proteins in a water bath. Pour in citric acid and beat on a slow speed for 7 minutes. Then increase the speed and beat for another 3 minutes.

Remove the bowl from the water bath, continue whisking for another 3 minutes. Grooves should appear on the cream, but it should not reach behind the mixer blades.
