  • Beef shanks - 6 Pieces
  • Dry white wine - 350 Milliliters
  • Orange juice - 200 Milliliters
  • Onions - 2 Pieces
  • Carrots - 2 Pieces
  • Tomato - 1 Piece
  • Tomato Paste - 100 Grams
  • Garlic - 8 Cloves
  • Orange zest - 1 tbsp. the spoon
  • Black peppercorns - 1 Teaspoon
  • Rosemary sprigs - 2 Pieces
  • Thyme sprigs - 2 Pieces
  • Bay leaf - 1 Piece
  • Olive oil - 3 tbsp. spoons
  • Shallots - 2 Pieces
  • Salt - 1 Teaspoon

How to make beef Ossobuco


Wash the beef shanks, remove veins and fat, dry with paper towels. Rub the meat on all sides with salt. Heat the olive oil in a heavy-bottomed skillet and place the shanks in it.


Fry on all sides, periodically turning the shanks, until the juice they let out evaporates and the meat acquires a beautiful golden hue and golden brown crust.


While the meat is browning, prepare the vegetables. To do this, wash and peel carrots, shallots, onions and tomatoes. Cut vegetables into small equal sized pieces. Peel the garlic and leave whole cloves.


Remove the fried meat from the pan and place it in a bowl. Put prepared vegetables in a frying pan, salt, toss in peppercorns and herbs. Fry over high heat for several minutes, stirring constantly.


Pour orange juice and grated orange peel into the vegetables. Then add wine and tomato paste. Mix everything well and simmer for five minutes so that the alcohol evaporates from the wine.


Put the pre-fried meat into the pan with the rest of the ingredients. Add enough water to completely cover the meat. Cover, reduce heat, and simmer for about two hours, adding more liquid as needed.
